3 litres or kilos of mussels
100 gr onions
50 gr shallots
3 spoons of persil
2 stalks of celeri
1/2 liter white wine
pepper
4 egg yolks
5 dl fresh cream
saffron

Cook the mussels with onions and shallots, persil, white wine, celeri : approximately 10 Minutes

Decortiquer the molds;

To reduce by half. Add the saffron

Clarify the eggs (separate the yolks from whites, add the cream.

Bake as a custard in English is the water(without bouillirr)

Pass through a sieve, serve hot or ice
